Nives was born from the encounter between the muscat grapes ripened under the sun and the frost of the Langhe hills.

The low temperatures set the seal on and exhalt all the aromas and flavours of the frozen grapes, creating a unique product.

To produce a bottle of Nives requires about 10kg of grapes.
To produce a bottle of classic wine requires about 1kg of grapes.
The beginnings
It all began with the love for Muscat grapes combined with the desire to create a product of excellence able to portray the tradition of the territory with a new approach.
Collection
The best bunches are harvested by hand during the month of September and are placed in small boxes placed in a ventilated location. Here they begin to dry and are finally cryopreserved.
Pressing
The pressing takes place when the external temperatures are low (-10° C) and the clusters are still frozen.
Pressing and refining
The pressing releases a dense and fragrant liquid, with a golden yellow color with amber and antique gold reflections. Finally, Nives is patiently aged in amphorae as in classical antiquity.

Nives is able to transfer unique emotions to the palate.
Tasting notes
The pressing releases a dense and fragrant liquid, with a golden yellow color with amber and antique gold reflections. Finally, Nives is patiently aged in amphorae as in classical antiquity. The final result is a very elegant ice wine, sweet but never oversweet, to be served cold.
Pairings
Blue goat cheeses - from the Alta Langa region, gorgonzola, bacon and savoury snacks. The combination of Nives and Roquefort is recommended for a laudable touch at the end of an important dinner.
